Lumpwood charcoal is usually made from softwood and comes in lumps of varying sizes, although larger sizes are best. It is easier to ignite than briquettes but tend to burn up faster.

Charcoal briquettes will for a long time with the minimum of smell and smoke although they can tae a little while to ignite. Use charcoal from sustainable managed forests; these will carry the FSC (Forest Stewardship Council) logo.

Self-igniting charcoal is simply lumpwood or briquettes that have been treated with a flamable substance. Always wait until the ignition agent has burnen off before cooking, or the smell may train the food.
